    25. Make ready 2 potatoes boiled
    26. Make ready 4 tbsp chopped coriander leaves
    27. Take 2 tbsp oil

    29. Take 1 tsp red chilli powder optional

    Instructions to make Bihar Special Litti Chokha:

    1. For Litti Dough- mix all the ingredients except water and make a dough by adding little water bat a time. Make soft dough like paratha dough! Cover it and let it rest for about 20 minutes.
    2. Now for chokha- brush some oil on tomatoes and eggplant and roast them on medium flame on gas stove using roasting plate. Keep rotating them till completely black.
    3. Take them out in a plate once done. Let it cool.
    4. Now for the Litti filling, mix all the ingredients in a bowl except water. Add little water if the filling is too dry. It should be able to loosely bind.
    5. Now, peel the eggplant and tomatoes, take them in a big bowl, add mashed potatoes and all other spiced. Mash everything together.
    6. If the eggplant seems a bit uncooked, add the mixture in a kadhai and cook for 4-5 minutes. Switch off the flame, chokha is ready.
    7. Now take the Litti dough and knead again for a minute. Grease your hands, take a ball size dough in your hands, flatten it.
    8. Take a spoonful of sattu filling and put in the center and cover with dough like a paratha. Roll again in hands. Make all littis like this.
    9. Now again heat the roasting plate, grease it and cook Litti on it and keep rotating till crisp.
    10. Once done, dip in desi ghee and roll. Serve hot with chokha and any chutney of your choice.
