Take For lunak/khulfa–
Prepare 1 bunch lunak
Get 3-4 chopped lady finger
Make ready 1 small brinjal chopped
Get 3-4 green chillies
Get 6-7 chopped garlic
Take 2 medium size chopped onions
Prepare 1 medium size chopped potat
Make ready 4-5 chopped tomatoes
Get 1/2 cup chana dal soaked
Make ready 2 tsp red chilli powder
Prepare 2 tsp coriander powder
Prepare 1/2 tsp turmeric powder
Get As per taste Salt
Get 3 tsp oil
Get 5 cups water
Take Pinch hing
Get For pyaaz wale chawal
Get 1 bowl rice soaked
Prepare 2 medium sized chopped onions
Make ready 2 bay leaves
Prepare 2 tsp red chilli powder
Prepare As per taste Salt
Get As required oil
Prepare 1 tsp cumin seeds
Take 2 & 1/2 bowls water
How to Make Aloo Aur Pyaaz Ki Sabzi. Cut the potatoes and soak in water. Heat oil over low flame in a kadhai. Add onions, potatoes, green chillies and saute on low flame until the onions turn pink and the potatoes turn a bit tender.
Instructions
Steps to make Lunak/khulfa ki sabzi and pyaaz wale chawal:
Wash khulfa with running water. Now in a cooker add oil and then add all chopped vegetables axcept tomatoes and saute till it gets light pink. Now add red chilli powder turmeric powder coriander powder and tomatoes and mix it. Now add soaked chana daal and cook it till all vegetables gets mixed. Now add lunak and salt. Mix it well for 5 minutes and add water. Cover it with pressure cooker lid and give 6 to 7 whistles.
After whistle gets cool smas all the vegetables.. If not cooked or getting smashed than give 2 more whistle and later smash lunak, as the lunak is ready. Heat 1 tsp of oil. Add hing and chopped garlic. Cook till garlic gets brownish colour and than add Garlic in lunak and let it be in gas for 5 minutes.
In a cooker add oil then add bay leaf later add onion saute it little than add cummin seeds and cook onion till it gets brownish colour. If onion is pink colour of rice will not come so cook onion till it gets brown.
As onion gets brown than remove cooker from gas. Slow the flame add red chilli powder and mix the onion properly. Then add rice which was soaked and washed and mix it gently keep it on gas and let it cook for 2 minutes on slow heat flame keep on mixing rice. Now add water and salt mix it cover it with lid and give 2 whistles.
As whistled gets cool remove lid than mix the rice otherwise it will get hard or sticky.
