Aloo baingan ki sabzi or potato eggplant vegetable is a mildly spiced Pakistani vegan dish made with eggplant and chopped potatoes. Raw eggplant can have a bitter taste, but once it's cooked it becomes soft and tender, with a rich, complex flavour. Due to it's flavour, texture and bulk, eggplant.

    4. Now add chopped eggplants and potatoes, add turmeric powder, red chilli powder, coriander powder, salt, give it a mix add 1/4 cup water, close the lid and let it cook on low flame.
    5. When it's half done, open the lid add in the chopped tomato and garam masala powder, mix well, close the lid, cook again untill it's done. Garnish with some chopped coriander leaves.
